While frozen ice cream would smush and melt when hit with a hammer, freeze dried ice cream is dry, so it breaks into smaller dry chunks of ice cream. Frozen ice cream also melts when in contact with a flame, while freeze dried ice cream has little to no reaction to fire.

Freeze Dried Ice Cream is real ice cream, but it has different characteristics. Freeze drying the ice cream gives it a much longer shelf life (25+ years when stored properly) and does not to be kept frozen or refrigerated.
